Maple Farro With Dried Cherries And Toasted Pecans Recipe

Try substituting farro for oatmeal with this tasty hot breakfast cereal recipe. Farro packs a punch of protein that will keep your belly happy for hours. Plus, this recipe can be made in a large batch, so it’s ready to heat in the microwave on busy mornings or for a quick post workout snack.

Ingredients

2 cups farro
3 cups unsweetened vanilla almond milk
¼ cup real grade A or B maple syrup
¼ cup dried cherries
¼ cup chopped pecans
pinch salt

Preparation

1. In a small pan, toast pecans over medium heat for 7 minutes, tossing consistently.
2. Add the farro, almond milk, maple syrup and salt to a pot, cover and bring to a boil. Watch this closely so it doesn’t overflow. Once boiling, turn the heat down to medium, keep covered and let cook 15-20 minutes until farro is cooked through and most of the almond milk has been absorbed. Farro is particularly good cooked al dente.
3. Toss the farro with the dried cherries and top with the toasted pecans. If storing in the fridge, it’s recommended to keep the pecans separate so they don’t get soggy.
